Cedar Plank Red Snapper with Cherry Tomatoes

Equipment

  • 2-3 Cedar Grilling Planks

Ingredients

  • 2 fillets red snapper recommend 6-8oz fillets
  • 1 tbsp olive oil
  • 2 cups cherry tomatoes
  • salt
  • 2 shallots sliced
  • 3 green onions
  • 1 tbsp olive oil
  • 4 large fresh basil leaves thinly sliced
  • salt

Instructions

  • Soak the grilling planks in water for 15 minutes.
  • Preheat the oven broiler or start the grill.
  • In a medium bowl, add the tomatoes, shallots, and onions, sprinkle with oil and salt, mix to coat and place on one of the planks. Grill or broil for about 5-7 minutes, until the tomatoes start to burst. Remove from the oven/grill, slice the onions and the shallots, mix all the veggies in a bowl, add basil. Set aside.
  • Rub the snapper fillets with oil, sprinkle with salt, place on a plank and grill or broil for about 10 minutes.
  • Remove the snapper from the oven/grill and top with the cherry tomato-basil mix.
