Ingredients

  • 1 lb sea scallops large
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  • In a large bowl, whisk together olive oil, lemon juice, garlic, Italian seasoning, salt, and black pepper.

  • Add the scallops to the marinade and toss to coat. Marinate for at least 15 minutes, up to 2 hours.

  • Remove scallops from marinade. Thread scallops onto skewers (if desired) or grill them directly.
  • Preheat grill to medium-high heat. Cook scallops for 1-2 minutes on each side until they are opaque and firm.
  • Garnish with chopped parsley and serve with lemon wedges.
