Boutargue is the salted and dried roe of the gray mullet and a Provençal delicacy with a concentrated, distinct flavor. You can taste the brine with a soft texture but it can just be felt on your teeth. Nicknamed “Southern caviar” or “Mediterranean caviar”, Boutargue caviar is a coveted speciality known as a rare natural product since it’s made entirely by hand. These eggs are only harvested between September and October, when the mules are getting ready to lay, which is why this caviar tends to be so expensive. Closer to truffle than caviar, it is typically sprinkled with olive oil and lemon juice, seasoned with a pinch of pepper, but never salt and can be served in slices on scrambled eggs and toast, grated over pasta with garlic, or coupled with traditionally fig alcohol or champagne.
