One-Pan Broiled Greek Branzino

  • 2 whole branzino about 1½ pounds each, gutted, fins removed and scaled
  • 5 sprigs fresh oregano
  • 3 garlic cloves smashed
  • 1 lemon sliced
  • 1 medium shallot sliced
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese crumbled


  • Preheat oven to 400°. Spray rimmed baking pan with cooking spray. Place branzino on baking pan; stuff each cavity with 1 oregano sprig, and half the garlic and lemon slices. Sprinkle shallot and tomatoes around branzino; drizzle with oil, sprinkle with remaining 3 oregano sprigs and salt and pepper to taste. Roast 20 minutes.
  • Preheat broiler to high; sprinkle tomatoes and shallots with cheese. Broil 2 minutes or until cheese is lightly browned
