Ingredients
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice about 2 lemons
- 1/4 cup freshly squeezed orange juice about 1 orange
- 3 tbsp soy sauce
- 3 garlic cloves minced
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme chopped
- 1 tbsp fresh parsley chopped
- 1 tsp smoked paprika or harissa
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 each zest of lemon and orange
- 1 tsp crushed red pepper flakes for extra spice
- (4) 6 oz Mahi Mahi fillets
Instructions
Combine Ingredients
- In a medium bowl, whisk together the olive oil, lemon juice, orange juice, soy sauce, minced garlic, honey, Dijon mustard, rosemary, thyme, parsley, smoked paprika, black pepper, salt, lemon zest, and orange zest until well combined.
Marinate Fish
- Place fish filets in a shallow dish. Pour the marinade over the fish, ensuring it’s well coated. Cover the dish and refrigerate for 30 minutes to 1 hour.
Grill
- Preheat your grill to medium-high heat. Remove the proteins from the marinade and grill until cooked through, turning occasionally for even cooking. Discard any remaining marinade. (4-5 min per side)
