
Ingredients
Grilled Scallops
- 1 lb scallops 10/20 or U-10
- olive oil
- salt & pepper
Mango Salsa
- 1 mango diced
- 1/2 cup red onion diced
- 1 jalapeno diced
- 1 lime juiced
- salt & pepper
- fresh cilantro
Coconut Rice
- 4 cups white rice cooked
- 1/2 cup coconut cream
- 2 tbsp sugar or any sweetener
Instructions
- Thaw scallops and pat dry. Season with salt & pepper.
- Prepare the mango salsa by adding the ingredients to a medium bowl and tossing with lime juice, salt, and pepper.
- Cook the white rice according to package and stir in coconut cream and sugar.
- Preheat grill to high heat and lightly spray with olive oil.
- Sear scallops for 3 minutes per side.
- Serve scallops over coconut rice and mango salsa.
