Island Style Grilled Scallops with Mango Salsa and Coconut Rice

Ingredients

Grilled Scallops

  • 1 lb scallops 10/20 or U-10
  • olive oil
  • salt & pepper

Mango Salsa

  • 1 mango diced
  • 1/2 cup red onion diced
  • 1 jalapeno diced
  • 1 lime juiced
  • salt & pepper
  • fresh cilantro

Coconut Rice

  • 4 cups white rice cooked
  • 1/2 cup coconut cream
  • 2 tbsp sugar or any sweetener

Instructions

  • Thaw scallops and pat dry. Season with salt & pepper.
  • Prepare the mango salsa by adding the ingredients to a medium bowl and tossing with lime juice, salt, and pepper.
  • Cook the white rice according to package and stir in coconut cream and sugar.
  • Preheat grill to high heat and lightly spray with olive oil.
  • Sear scallops for 3 minutes per side.
  • Serve scallops over coconut rice and mango salsa.
