Often sold as Ahi, The Yellowfin Tuna is a species found in tropical and subtropical waters. This spectacular fish is delicious grilled and a nice sear is often all that is needed when preparing. Also, Yellowfin Tuna is particularly useful for dishes that require raw fish, such as sushi and specifically sashimi. Yellowfin has a pronounced flavor that requires very little seasoning, but both Mediterranean and Asian flavors pair well with it.
