Ingredients

  • 1 lb Texas Gulf shrimp, cooked peeled and deveined
  • 1/2 cup sour cream
  • 1/4 cup cilantro, chopped
  • 3 tbsp lime juice
  • 2 tbsp sweet onion, minced
  • 2 tbsp jalapeno, seeded and finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 avocados, halved, pitted, peeled and diced
  • 1 cup tomatoes, chopped
  • 1 yellow squash, sliced (for serving)
  • 1 green squash, sliced (for serving)

Instructions

  • In a bowl, combine Texas Gulf shrimp, sour cream, cilantro, lime juice, onion, jalapeno, salt and pepper.
  • Spoon into avocado shells or a serving dish. Garnish with sliced avocado and tomatoes: serve with squash on the side.
