Ingredients
- 1 lb Texas Gulf shrimp, cooked peeled and deveined
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 3 tbsp lime juice
- 2 tbsp sweet onion, minced
- 2 tbsp jalapeno, seeded and finely chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 avocados, halved, pitted, peeled and diced
- 1 cup tomatoes, chopped
- 1 yellow squash, sliced (for serving)
- 1 green squash, sliced (for serving)
Instructions
- In a bowl, combine Texas Gulf shrimp, sour cream, cilantro, lime juice, onion, jalapeno, salt and pepper.
- Spoon into avocado shells or a serving dish. Garnish with sliced avocado and tomatoes: serve with squash on the side.
