Ingredients
- 1/2 green pepper diced
- 1/2 red pepper diced
- 1 onion diced
- 1 stick of butter
- 1-2 tsp Cajun seasoning adjust to taste
- 3 tbsp garlic minced
- 1 lb Frozen Crawfish tail meat defrosted
- 1 cup half and half
- 1 cup pasta water
- 1 block Boursin cheese or any garlic & fine herbs cheese
- 6 oz Colby Jack cheese shredded
- 1/2 cup Parmesan cheese
- 1 pkg Fettuccine noodles
Instructions
- Boil Fettuccine Noodles set aside. (Save 1 cup pasta water)
- Melt butter in sauce pan. Sweat down vegetables and season with Cajun seasoning. Start with 1 tsp and adjust to taste.
- When onions are translucent add 3 tbsp of minced garlic.
- When the garlic is fragrant add 1 lb of crawfish tail meat. Cook for about 5 minutes before adding 1 cup of half/half and 1 cup of pasta water.
- Mix and add 1 block of Boursin cheese and 6 oz of shredded Colby jack cheese.
- Add more Cajun seasoning.
- Stir until the cheese is blended with the sauce.
- Simmer for about 15-20 minutes.
- After the sauce cooks down, add ½ cup of parmesan cheese and fettuccine noodles
- You can serve like this or bake it on 350 for 15 minutes.
