Boil Fettuccine Noodles set aside. (Save 1 cup pasta water)
Melt butter in sauce pan. Sweat down vegetables and season with Cajun seasoning. Start with 1 tsp and adjust to taste.
When onions are translucent add 3 tbsp of minced garlic.
When the garlic is fragrant add 1 lb of crawfish tail meat. Cook for about 5 minutes before adding 1 cup of half/half and 1 cup of pasta water.
Mix and add 1 block of Boursin cheese and 6 oz of shredded Colby jack cheese.
Add more Cajun seasoning.
Stir until the cheese is blended with the sauce.
Simmer for about 15-20 minutes.
After the sauce cooks down, add ½ cup of parmesan cheese and fettuccine noodles
You can serve like this or bake it on 350 for 15 minutes.
