Very similar in all ways to the Chinook, or Alaskan King Salmon, the New Zealand King Salmon was a successful attempt at introducing the King Salmon species into non-native waters. The New Zealand King, like its relatives, possesses a high level of omega 3 oils. Novice cooks love working with this fish as its high oil content is very forgiving. Additionally, it has a firm, rich, orange texture that is succulent and looks magnificent when plated.
